even for a stir fry….
…the slow cooker comes to the rescue!!
I haven’t posted since Christmas – partly because i’ve been too busy, partly because I haven’t been in the mood when the food looked good, partly because when I have been in the mood, the food didn’t look good.
Well.. it’s the ‘no fuss’ kitchen isn’t it… And it isn’t about food which looks good. It is about food which is doable on a budget, on wonky schedules, and from whatever leftover vegetables are in the fridge.
So anyway, having gotten home at 10pm yesterday with a full belly after having visited a friend who had just had surgery – and made them a large pot of chicken pho, I was confronted with the decision of – should I buy lunch tomorrow, or should I stick something in the slow cooker now and call that lunch?
I decided to go with the former, and this is what I stuck in the slow cooker:
- 1/2 purple cabbage
- 2 handfuls curly kale
- 3 sweet potatoes
- 1 can butter beans
- 1 chicken stock cube
- 1 chinese sausage
- 2 tsp of capers
- garlic granules
- black pepper
- Squirt of sweet chilli sauce
- Sprinkle of sichimi just once cooked
And this is what it looked like in my lunchbowl at work today
It’s not the most apetising thing in the world… but you know what – it cost me next to nothing, and the only time spent on it was 15 minutes of cutting up veg. It cooked for 3 hours in my not-so-slow cooker overnight (the high on it gets too high..) And I put some into a tub in the morning and brought it to work… voila, lunch!
