Slow Cooked Beef Stew

I went to Cornwall for Easter and it was an amazing holiday.  So relaxing.  I think holidays make me sleep more and more lazy though, as I absolutely couldn’t be arsed to make a large week’s worth of stir fry today.. so I made a beef stew in the slow cooker instead.

This was a really easy and really cheap stew.  1 pack of the cheapest stewing beef you can possibly get, yellow stickered if possible, two carrots, some potatoes, two courgettes, one onion, whatever herbs and spices is around the kitchen, a stock cube, half a bottle of wine, some salt, and some cooked rice.

Put everything but the cooked rice into the slow cooker, Make sure there is enough liquid to cover 2/3 of what’s in there.  Leave it for 4-8 hours too cook, stir in the cooked rice, taste and add more seasoning if necessary and et voila! Lunch for at least 4 days!

IMG_20170423_163500I even added the end of a jar of mint sauce and tartare sauce in there.  Pretty usual ingredients in the fridge but pretty odd for a stew…. but it didn’t make it taste weird, just yum.  I am sooooooooooooooo lazy.

And since that photo up there isn’t very appetizing, here are some photos of my balcony flowers.  Loooooove the pinky purple of everything which is flowering right now 🙂
