Curry isn’t difficult, and can be very cheap.
Ingredients for this one was :
- ~600g chicken thighs (£1.50)
- 1 packet cheapest passata (or chopped tomatoes) (£0.40)
- 50g (any) curry powder (£0.40)
- 1 large / 2 small courgettes (£0.60)
- 1 aubergine (£0.70)
- 1 large baking potato (£0.15)
- Optional – Splash of milk/coconut milk/yogurt/whatever you have
- 2 onions
- Splash oil
- Dash chilli powder / crushed chilies
There are several ways of preparing this. You can marinate the chicken with the curry powder with a splash of oil/water before you start cooking. Or you can skip this and start with-
Fry onions in oil until caramelised, add curry powder and toast for a little until fragrant, add everything else in. Cover and simmer for 30-60 minutes. Add salt & chilli to taste! Garnish with coriander, parsley, fried onions or anything else you fancy if you have them laying around.
Yes I mean it.. that’s it. It isn’t ‘true’ to any culture or tradition.. but it tastes good to me and that’s all that matters 😀 I will eat it with noodles this weekend, and if there is any left, I will have them with rice for lunchboxes.
Costing : this came up to £4 for the ingredients, and it will last more than 4 meals so including rice and/or noodles, it all comes up to <£1/ meal. Budget win!
Note: The curry powder I used was something like this Jalfrezi powder but I bought it expired and reduced to £0.20. I’ve adjusted the pricing for 50g of supermarket curry powder, but in reality any curry powder can be used, it’ll just taste different.
